Muffiny malinowe z kremem maślanym/ Raspberry muffins with the buttercream frosting

Wyglądają jak babeczki, ale tak naprawdę są to muffiny przebrane za babeczki :P
Ozdobiłam je kremem maślanym, który jest strasznie słodki, ale co tam, wygląda pięknie!


These look like cupcakes, but in fact, they are muffins in cupcake disguise :P
I've decorated them with butter cream frosting which is too sweet, but what the hell, it's so pretty!



Składniki: (na 12 muffinek):
  • 60 g masła
  • 200 g mąki
  • 2 łyżeczki proszku do pieczenia
  • pół łyżeczki sody oczyszczonej
  • 1/2 szklanki cukru
  • 1/4 łyżeczki soli
  • około 200 ml mleka
  • 1 duże jajko
  • 150 g malin (dodałam mrożone)
Masło roztopić, odstawić do ochłodzenia. W dużym naczyniu wymieszać mąkę, proszek, sodę, cukier, i sól. Do naczynia z podziałką wlać sok z naszej cytryny, następnie dopełnić mlekiem do 200 ml. Dodać roztrzepane jajko i rozpuszczone masło, wymieszać.
Połączyć oba naczynia, wymieszać tylko do połączenia się składników, na końcu wmieszać maliny. Formę do muffinek wyłożyć papilotkami, napełnić je w 3/4 wysokości.
Piec w temperaturze 200ºC przez około 25 minut. Wyjąć z piekarnika, ale pozostawić w formie przez ok. 5 - 10 minut (będą bardzo miękkie).

Krem maślany:
  • 1 kostka masła (200 g) w temperaturze pokojowej
  • ok. 4 szklanek cukru pudru
  • 2 łyżki mleka
  • 1 łyżeczka ekstraktu waniliowego (opcjonalnie)
  • odrobina barwnika spożywczego w żelu (opcjonalnie)
 Za pomocą miksera ubić masło na puszystą i białą masę. Dodawać stopniowo 2 szklanki cukru pudru i miksować. Dodać mleko i ekstrakt waniliowy ciągle mieszając. Dodać kolejne 2 szklanki cukru pudru, dobrze zmiksować. Na koniec dodać barwnik i wszystko jeszcze raz zmiksować na małych obrotach. Nakładać do rękawa cukierniczego z ozdobna końcówką i dekorować muffiny.

Ingredients (for 12 muffins):
Using an electric mixer, mix the butter until smooth and creamy (a few minutes). Add 2 cups of the sugar and continue mixing. Add the milk and vanilla and on low speed mix until combined. Add two more cups of sugar and on low speed mix until light and fluffy. At the end, add food colouring and mix everything well. Decorate the muffins with the buttercream frosting.

  • 60 g of butter
  • 200 g of flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt 
  • 200 ml of milk
  • 1 egg, large
  • 150 g of raspberries (I used frozen ones)
Melt the butter and put aside. In a large bowl combine flour, baking powder, baking soda, sugar and salt. In the other bowl combine milk, beaten egg and melted butter. Mix the ingredients from two bowl until the ingredients are just combined. Then add frozen raspberries and mix them with the batter. Prepare muffin form with paper muffin molds- place the batter to the 3/4 of their height. Bake at 400ºF for about 25 min. Then take them out of the oven and let them chill in the form for about 5-10 min. (because they're very soft).

The buttercream frosting:
  • 2 sticks of butter, at room temperature
  • about 4 cups of confectioners' sugar
  • 2 tablespoons of milk
  • 1 teaspoon of vanilla extract (optional)
  • a little bit of food colouring (optional)
In an electric mixing bowl fitted with the paddle attachment or if you don't have an electric mixing bowl use a large bowl and an electric mixer, mix the butter until smooth and creamy (a few minutes). Add 2 cups of the sugar, the milk and vanilla and on low speed mix until combined. Add two more cups of sugar and a food colouring and mix on low speed until light and fluffy.

Jabłecznik/Apple pie

Bardzo lubię jabłecznik, to jedno z moich ulubionych ciast. I w sumie jest bardzo łatwe do zrobienia. Może przy tej wersji jest trochę więcej roboty, ale jak ma się czas to wszystko jest ok ;)


Apple pie is one of my favourite pies. It's easy to make, maybe this version needs more time, but if we are free at the moment-that's totally ok ;)

Jedyna rzecz, która się zmienia to nadzienie. Użyłam 1 kg jabłek, trochę cukru, cynamonu i gałki muszkatołowej. To wszystko :)

The only thing that is different about this one is filling. I used 1 kg of apples, a little bit of sugar, cinnamon and nutmeg. That's all :)

Film Saturday: Radio na fali/The boat that rocked (2009)


'Radio na fali' to film, który odkryłam w wakacje i od razu przypadł mi do gustu. Muszę się przyznać, że najpierw zachęciła mnie do niego obsada: Bill Nighy, Philip Seymour Hoffman czy Chris O'Dowd. A potem motyw muzyczny: lata 60., era popu i rock'n'rolla. Dodatkowo lekka i zabawna fabuła, chociaż momentami smutna, czyli wszystko składa się w świetną całość. Słyszałam różne komentarze, od zachwytu po rozczarowanie, ale najlepiej jak każdy sam sformułuje swoją opinię (do czego zachęcam) ;)




'The boat that rocked' is a nice film which I discovered some time ago during summer holidays and from the start, I just loved it! I have to admit that what brought me to this was a marvellous cast: Bill Nighy, Philip Seymour Hoffman and Chris O'Dowd. And then, of course, musical theme: pop&rock'n'roll of the 60s. In adition, funny and likeable plot, although sometimes sad- these elements make up a perfect story. I've heard different comments about 'The boat that rocked'-good and bad, but I would like you to make your own judgment ;)


Nie będę szczególnie streszczać tej historii, każdy zainteresowany może poczytać o niej w internecie lub po prostu obejrzeć :P

Babeczki Czerwony Aksamit/Red Velvet cupcakes

W końcu mogę korzystać z moich Świątecznych podarunków. Tym razem wykorzystałam moje prześliczne papiloty w serduszka, aby zrobić "walentynkowy" deser dla rodziny. A żeby pozostać w tonacji czerwonej, wypróbowałam w końcu przepis na babeczki Red Velvet, które były od dawna nr 1 na liście rzeczy do zrobienia :) Tak więc zapraszam do oglądania i próbowania przepisu!


Finally I can use my Christmas gifts just as I intended to. This time I used my pretty cupcakes folds with little pink hearts to make a 'Valentine' dessert for my family. And just to fit in the red convention I tried a Red Velvet cupcakes recipe, which by the way, was a number 1 on my to-do-list. So, behold! Here are the results of my work and a recipe. Enjoy! :)

Składniki: (na 24 sztuki)
  • 2,5 szklanki mąki pszennej
  • 2 łyżki kakao
  • 1 łyżeczka soli
  • 1 szklanka cukru
  • 1,5 szklanki oleju
  • 2 duże jajka
  • pół łyżeczki czerwonego barwnika w żelu (paście)
  • 1 łyżeczka ekstraktu z wanilii
  • 1 szklanka maślanki lub kefiru
  • 1,5 łyżeczki sody oczyszczonej
  • 2 łyżeczki białego octu
Wszystkie składniki powinny być w temperaturze pokojowej.
Mąkę, kakao, sól - przesiać, odłożyć.
W misie miksera zmiksować olej z cukrem, dodawać jajka, jedno po drugim i miksować. Dodać wanilię i barwnik, zmiksować do połączenia.
Do masy dodawać na przemian maślankę i mąkę, do wyczerpania, cały czas miksując.
W małej miseczce wymieszać sodę z octem, powstanie piana. Od tego momentu działać szybko - pianę dodać do ciasta i zmiksować (średnia prędkość miksera przez 10 sekund).
Przygotować formę do muffinek, wyłożyć papilotkami. Ciasto rozdzielić pomiędzy papilotki, nakładając do 3/4 wysokości papilotki.
Piec w temperaturze 180ºC przez około 20 - 25 minut, do tzw. suchego patyczka (najlepiej bez termoobiegu). Wyjąć, wystudzić na kratce.

Krem-bita śmietana
  • 500 ml śmietany kremówki 36%
  • kilka łyżeczek cukru pudru (wg uznania)
  • 1-2 opakowania śmietan-fixu*(opcjonalne)
Kremówkę ubić na gęstą masę, dodać śmietan-fix  wymieszany z cukrem pudrem. Ubijać, ale uważać żeby nie przebić. *Nie trzeba dodawać śmietan-fixu, ale ja lubię, ponieważ śmietana dłużej zachowuje kształt. Wtedy wystarczy dodać sam cukier puder.

Ingredients: (make 24 cupcakes)
  • 2 1/2 cups of flour
  • 2 tablespoons of cocoa powder
  • 1 teaspoon of salt
  • 1 cup of sugar
  • 1 1/2 cups of vegetable oil
  • 2 big eggs
  • 1/2 teaspoon of gel red food colouring
  • 1 teaspoon of vanilla extract
  • 1 cup of buttermilk
  • 1 1/2 teaspoons of baking soda
  • 2 teaspoons white distilled vinegar
 Ingredients should be at room temperature!
Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.
In a medium mixing bowl, sift together the flour, salt, and cocoa powder. In a large bowl gently beat together the oil and sugar. Add food colouring and vanilla extract-combine the ingredients well. Then, add eggs, one at a time, and mix everything together. Add the sifted dry ingredients and buttermilk to the wet, but do it gradually, making sure that you add a little bit of flour, then buttermilk, and continue until everything is used. Everytime you add something-mix it well.
In a small bowl combine vinegar and baking soda. Now you have to act fast- add this mixture to the batter and mix with mixer set on medium speed for about 10 sec.
Divide the batter evenly among the cupcake tins about 3/4 filled. Bake in oven for about 20 to 25 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick to make sure that they are baked. Remove from oven and cool completely before frosting. 

Frosting- whipped cream 
  • 500 ml of whipping cream
  • several teaspoons of confectioners' sugar
  • 1-2 little bags of cream-fix*(optional)
Beat the cream until light and fluffy. Add confectioners' sugar and continue to beat. Remember not to over-beat the whipping cream.
